Moroccan inspired baked eggs

Get ready for a taste sensation! Inspired by traditional Moroccan flavours and my new obsession with baked eggs, this dish is an absolute winner.
Ingredients

Half a red capsicum

Half a green capsicum

Half a red onion
-
2 cloves of garlic
-
1 fresh chilli
-
12 cherry tomatoes
-
1 tin chopped tomatoes (or substitute with 2 fresh tomatoes, chopped)

50gm feta cheese

Moroccan seasoning*
-
1 tablespoon olive oil
-
4 eggs
-
Quarter bunch of fresh coriander (stems chopped and leaves set aside for garnish)

Fresh lemon juice
Method

Preheat to 160 degrees.

Heat olive oil in a large oven proof pan then add the chilli and Moroccan seasoning to fry off for a couple of minutes.

Add the capsicums, onion and garlic, and cook for a few minutes until softened.

Add all the tomatoes, salt, pepper and coriander stems and cook for a few minutes until the tomatoes break down.

Make 4 small holes and crack the eggs in.

Sprinkle the feta over the top.

Cook until your eggs reach the desired consistency (5 – 10 minutes).

Sprinkle with the coriander leaves and serve with your favourite toasted bread.
Simply divine!
*Moroccan seasoning can be purchased from your local supermarket; if you want to have a go at making your own, combine the following: salt, pepper, half teaspoon each of dried ginger and turmeric, and one teaspoon of cumin, coriander, and sweet paprika.
