The trouble for me, with store bought granola, is that it’s nigh impossible to find one that is low is sugar and tastes great; and one that can provide a good morning protein boost. The nuts and seeds that are so important to a vegetarian are few and far between in commercial brands. The solution? Make my own divinely delicious and nutritious granola that meets my needs. I can’t say this is a more economical approach as having an abundance of the ‘good’ ingredients costs money – hence the sparsity in commercial brands. But it is simple to make and very filling so you will typically eat less than you normally might.

Ingredients

  • 500gm whole grain oats

  • 50gm buckwheat puffs (or any ‘puff’ you prefer)

  • 100gm quinoa flakes

  • 75gm chia seeds (any colour)

  • 150gm each of pepita and sunflower seeds

  • 100gm coconut shavings

  • 500gm raw mixed nuts

  • 1 tablespoon cinnamon

  • 125ml maple syrup

  • 250ml apple juice

  • 2 tablespoons coconut oil

  • 1 tablespoon vanilla extract

  1. Preheat your oven to 160 degrees.

  2. Mix all the dry ingredients together in a large bowl.

  3. Heat the wet ingredients in a small saucepan over a low heat until just mixed and warm.

  4. Add the wet ingredients to the dry and mix thoroughly until all of the dry ingredients are coated.

  5. Line oven trays with baking paper and spread mixture over them (will take about 3 trays).

  6. Bake for 20 – 30 minutes (depending on power of your oven) until golden brown, mixing half way through as the edges will start to burn.

  7. Allow to cool on the trays then store in an air-tight container.

Serve with your choice of milk – I prefer kombucha which gives it a nice kick – and enjoy!
