These melt-in-your-mouth vegan cookies are incredibly simple to make, totally more-ish, and tend to be gone before they’ve even fully cooled! Easy to make and even easier to eat!
Ingredients
- 1 cup almond meal
- 1/3 cup nut butter (any, but cashew is a favourite)
- 1/8 teaspoon baking powder (gluten free if applicable)
- 1/2 teaspoon each of ginger and cinnamon powder
- 1/3 cup dark chocolate chips
- Â teaspoon vanilla extract
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil (liquid)
Method
- Preheat oven to 180 degrees and line 2 trays with baking paper.
- Combine dry ingredients in a bowl.
- Mix wet ingredients together in a small bowl or jug then add to the dry ingredients and combine gently.
- Roll full teaspoons of the mix into balls and flatten slightly on the tray.
- Bake for 10 – 12 minutes.
