These melt-in-your-mouth vegan cookies are incredibly simple to make, totally more-ish, and tend to be gone before they’ve even fully cooled! Easy to make and even easier to eat!

 

Ingredients

  • 1 cup almond meal
  • 1/3 cup nut butter (any, but cashew is a favourite)
  • 1/8 teaspoon baking powder (gluten free if applicable)
  • 1/2 teaspoon each of ginger and cinnamon powder
  • 1/3 cup dark chocolate chips
  •  teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil (liquid)

Method

  1. Preheat oven to 180 degrees and line 2 trays with baking paper.
  2. Combine dry ingredients in a bowl.
  3. Mix wet ingredients together in a small bowl or jug then add to the dry ingredients and combine gently.
  4. Roll full teaspoons of the mix into balls and flatten slightly on the tray.
  5. Bake for 10 – 12 minutes.
